For the Crust:
- 2 cups cooked chicken, shredded
- 4 cups mixed greens (romaine, cabbage, spinach)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/2 cup sliced almonds
- 1/4 cup chopped cilantro
- 2 green onions, sliced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 tsp grated ginger
Instructions
1. Prepare the Crust:
- In a large bowl, combine the mixed greens, shredded chicken, carrots, bell pepper, almonds, cilantro, and green onions.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
