For the Crust:

  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens (romaine, cabbage, spinach)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup sliced almonds
  • 1/4 cup chopped cilantro
  • 2 green onions, sliced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the mixed greens, shredded chicken, carrots, bell pepper, almonds, cilantro, and green onions.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
