For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup finely chopped apple
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 tbsp cold butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, 1 tsp cinnamon, nutmeg, and salt.
- In a large bowl, mix pumpkin puree, granulated sugar, 1/4 cup brown sugar, oil, eggs, and vanilla until smooth.
- Gradually fold dry ingredients into wet ingredients until just combined. Stir in chopped apples.
- For streusel: combine oats, 1/4 cup flour, 1/4 cup brown sugar, and 1/4 tsp cinnamon. Cut in butter until mixture is crumbly.
- Divide batter evenly among muffin cups. Sprinkle streusel topping over each. Bake for 20-25 minutes or until a toothpick comes out clean.
