For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup finely chopped apple
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 2 tbsp cold butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, 1 tsp cinnamon, nutmeg, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, 1/4 cup brown sugar, oil, eggs, and vanilla until smooth.
  4. Gradually fold dry ingredients into wet ingredients until just combined. Stir in chopped apples.
  5. For streusel: combine oats, 1/4 cup flour, 1/4 cup brown sugar, and 1/4 tsp cinnamon. Cut in butter until mixture is crumbly.
  6. Divide batter evenly among muffin cups. Sprinkle streusel topping over each. Bake for 20-25 minutes or until a toothpick comes out clean.
