For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups finely chopped apples
- For crumb topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup granulated sugar, 1/4 cup cold butter, cubed, 1/2 tsp cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugars, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix milk, melted butter, eggs, and vanilla. Pour into dry ingredients and stir until just combined. Fold in chopped apples.
- For the topping, combine flour, sugars, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
- Fill muffin cups 2/3 full. Sprinkle crumb topping generously over each.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
