Apple Muffins with Crumb Topping

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups finely chopped apples
  • For crumb topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup granulated sugar, 1/4 cup cold butter, cubed, 1/2 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugars, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix milk, melted butter, eggs, and vanilla. Pour into dry ingredients and stir until just combined. Fold in chopped apples.
  4. For the topping, combine flour, sugars, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
  5. Fill muffin cups 2/3 full. Sprinkle crumb topping generously over each.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.

You can customize the seasonings to taste.
