For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 large apples, peeled and diced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup cold butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
  2. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
  3. Toss apples with brown sugar, cinnamon, and nutmeg. Spoon over cheesecake layer.
  4. Combine flour, oats, and cold butter until crumbly. Sprinkle over apple layer.
  5. Bake for 60-70 minutes until set. Cool completely before refrigerating for 4 hours.
