For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup apple butter
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup sugar for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Cream together butter and sugar until light and fluffy. Beat in apple butter and egg until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Gradually add to wet ingredients, mixing until just combined.
  4. Shape dough into 1-inch balls, roll in sugar, and place 2 inches apart on baking sheets. Flatten slightly with the bottom of a glass.
  5. Bake for 8-10 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to wire racks.
