For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup buttermilk
  • 2 cups peeled and diced apples
  • 1/2 cup chopped pecans
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and brown sugar until light. Beat in eggs one at a time, then stir in vanilla and buttermilk.
  4. Gradually blend in the flour mixture. Fold in diced apples. Pour batter into prepared pan.
  5. Mix pecans, granulated sugar, and cinnamon in a small bowl. Sprinkle evenly over batter.
  6. Bake for 50-60 minutes, or until a toothpick inserted comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
