For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup buttermilk
- 2 cups peeled and diced apples
- 1/2 cup chopped pecans
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream butter and brown sugar until light. Beat in eggs one at a time, then stir in vanilla and buttermilk.
- Gradually blend in the flour mixture. Fold in diced apples. Pour batter into prepared pan.
- Mix pecans, granulated sugar, and cinnamon in a small bowl. Sprinkle evenly over batter.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
