Irresistible Almond Flour Apple Cake

A moist and flavorful gluten-free cake made with almond flour and fresh apples.

For the Crust:

  • 2 cups almond flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1 tbsp honey (optional for drizzle)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together almond flour, coconut sugar, baking powder, cinnamon, and nutmeg.
  3. In another bowl, beat eggs, then stir in melted coconut oil and vanilla extract.
  4. Combine wet and dry ingredients, then fold in diced apples.
  5. Pour batter into prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before drizzling with honey (optional).

You can customize the seasonings to taste.
