- 9 ounces fresh cheese tortellini
- 4 cups beef broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced

- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked; drain excess fat.
- Add the diced onion, carrots, celery, and garlic to the pot; sauté for 5 minutes until softened.
- Stir in the beef broth, diced tomatoes, and Italian seasoning; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add the cheese tortellini and cook for an additional 5-7 minutes until tortellini is tender.
- Season with salt and pepper to taste, then serve hot.
