Description

A hearty beef soup featuring cheese tortellini, vegetables, and savory broth.


Ingredients

  • 1 pound ground beef
  • 9 ounces fresh cheese tortellini
  • 4 cups beef broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked; drain excess fat.
  2. Add the diced onion, carrots, celery, and garlic to the pot; sauté for 5 minutes until softened.
  3. Stir in the beef broth, diced tomatoes, and Italian seasoning; bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add the cheese tortellini and cook for an additional 5-7 minutes until tortellini is tender.
  6. Season with salt and pepper to taste, then serve hot.
