A delicious and easy-to-make layered casserole with all the flavors of traditional beef enchiladas.

For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce
- 6 corn tortillas, cut into quarters
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat.
- Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
- Spread 1/4 cup enchilada sauce in the bottom of a 9×13 baking dish.
- Layer half the tortilla pieces, half the beef mixture, half the black beans, and half the cheeses. Repeat layers.
- Pour remaining enchilada sauce over the top and spread evenly.
- Bake uncovered for 25-30 minutes until bubbly and cheese is melted.
- Let cool for 5 minutes before serving. Top with sour cream and cilantro.

You can customize the seasonings to taste.
