For the Crust:
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for 6-7 minutes per side, until fully cooked. Brush with BBQ sauce during the last few minutes of cooking. Let rest, then slice.
- Assemble bowls with cooked quinoa or rice as the base. Top with roasted sweet potatoes, sliced BBQ chicken, avocado, red onion, and fresh cilantro. Drizzle with extra BBQ sauce if desired.
