For the Crust:
- For the bars:
- 3 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 cups old-fashioned oats
- 1/2 tsp cinnamon
- 1/4 tsp salt
- For the topping (optional):
- 2 tbsp peanut butter, melted
- 1 tbsp honey
- 1/4 cup chopped peanuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add peanut butter, honey, and vanilla extract to the bananas. Mix well until fully combined.
- Stir in the oats, cinnamon, and salt until everything is evenly incorporated.
- Press the mixture firmly into the prepared baking pan, smoothing the top with a spatula.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Let cool completely in the pan before slicing into bars.
- For the topping (if using): Drizzle melted peanut butter and honey over the cooled bars, then sprinkle with chopped peanuts.
Notes
Store bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For firmer bars, chill before serving. These can also be frozen for up to 3 months.
