- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the butter and sugars until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pecans and caramel sauce.
- Spoon the batter into the muffin liners, filling each about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra caramel flavor, drizzle additional caramel sauce on top before serving. Store in an airtight container for up to 3 days.
