- 2 slices of whole-grain bread
- 1 ripe avocado, mashed
- 2 large eggs
- 100g smoked salmon slices
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Toast the bread slices until golden brown.
- In a saucepan, bring water to a simmer and poach the eggs for 3-4 minutes.
- Spread the mashed avocado evenly on the toasted bread.
- Top with poached eggs and smoked salmon slices.
- Drizzle with lemon juice and season with salt, pepper, and fresh dill.
Notes
For a vegetarian version, omit the smoked salmon and add cherry tomatoes.
