Authentic Mexican Rice

For the Crust:

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh cilantro

Instructions

1. Prepare the Crust:

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. Heat the oil in a large skillet over medium heat. Add the rice and cook, stirring frequently, until golden brown.
  3. Add the onion and garlic to the skillet and cook for 2 minutes until softened.
  4. Stir in the tomato sauce, chicken broth, cumin, and salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in cilantro before serving.

Notes

You can customize the seasonings to taste.
