For the Crust:
- For the oatmeal base:
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 3/4 cups milk (dairy or plant-based)
- 1/3 cup maple syrup or honey
- 1 large egg
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- For the apple mixture:
- 2 medium apples, peeled and diced
- 1 tbsp lemon juice
- 1 tbsp brown sugar
- 1/2 tsp ground cinnamon
- For topping (optional):
- 1/4 cup chopped walnuts or pecans
- Additional maple syrup for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix together oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together milk, maple syrup, egg, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- In a separate bowl, toss diced apples with lemon juice, brown sugar, and cinnamon.
- Spread half of the oat mixture into the prepared baking dish. Top with apple mixture, then spread remaining oat mixture over apples.
- Sprinkle with chopped nuts if using.
- Bake for 35-40 minutes until golden brown and set.
- Let cool for 5-10 minutes before serving. Drizzle with additional maple syrup if desired.
Notes
This baked oatmeal can be stored in the refrigerator for up to 5 days. Reheat individual portions in the microwave. For a dairy-free version, use plant-based milk and coconut oil. You can substitute pears for apples if preferred.
