Soft and chewy cookies infused with the warm flavors of apple cider, perfect for fall baking.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped apples

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream the butter and sugars until light and fluffy.
  4. Beat in the apple cider, vanilla extract, and eggs until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped apples.
  7. Drop spoonfuls of dough onto the prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, use freshly pressed apple cider. Store in an airtight container for up to 3 days.
