- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup apple cider
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup chopped apples
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream the butter and sugars until light and fluffy.
- Beat in the apple cider, vanilla extract, and eggs until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped apples.
- Drop spoonfuls of dough onto the prepared baking sheets.
- Bake for 10-12 minutes or until edges are golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best results, use freshly pressed apple cider. Store in an airtight container for up to 3 days.
