Description

A creamy cheesecake with the warm flavors of apple cider, perfect for fall gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup apple cider, reduced to 1/2 cup
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup sour cream
  • For topping: 2 apples, thinly sliced

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add reduced apple cider, vanilla, cinnamon, and nutmeg; mix well.
  5. Beat in eggs one at a time, then stir in sour cream.
  6. Pour the batter over the crust and bake for 55-60 minutes, or until the center is just set.
  7. Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
  8. Before serving, arrange apple slices on top for garnish.

Notes

Ensure the apple cider is reduced to concentrate the flavor; chill overnight for best results.
