- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup apple cider, reduced to 1/2 cup
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup sour cream
- For topping: 2 apples, thinly sliced
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add reduced apple cider, vanilla, cinnamon, and nutmeg; mix well.
- Beat in eggs one at a time, then stir in sour cream.
- Pour the batter over the crust and bake for 55-60 minutes, or until the center is just set.
- Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
- Before serving, arrange apple slices on top for garnish.
Notes
Ensure the apple cider is reduced to concentrate the flavor; chill overnight for best results.
