- 2 large eggs, beaten
- 1/2 cup panko breadcrumbs
- 1/2 cup cornmeal
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- For serving:
- 1/2 cup ranch dressing
- 1/2 tsp cayenne pepper (optional)
Instructions
1. Prepare the Crust:
- Preheat the air fryer to 400°F (200°C) for 5 minutes.
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko, cornmeal, garlic powder, paprika, salt, and pepper.
- Dredge each pickle slice in flour, shaking off excess. Dip in egg, then coat in the breadcrumb mixture, pressing gently to adhere.
- Place breaded pickles in a single layer in the air fryer basket, ensuring they don’t overlap. Lightly spray with cooking oil.
- Air fry for 8-10 minutes, flipping halfway, until golden and crispy.
- Repeat with remaining pickles in batches.
- Mix ranch dressing with cayenne pepper (if using) for dipping. Serve immediately.
Notes
For extra crispiness, let breaded pickles rest for 5 minutes before air frying. Store leftovers in an airtight container (reheat in air fryer for best texture).
