For the Crust:

  • 2 large ripe bananas (mashed)
  • 1 cup rolled oats
  • 1/4 cup chocolate chips or raisins (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash bananas until smooth.
  3. Stir in oats and optional mix-ins until fully combined.
  4. Drop tablespoon-sized portions onto baking sheet and flatten slightly.
  5. Bake for 12-15 minutes until edges are golden.
  6. Let cool for 5 minutes before serving.

Notes

For crispier cookies, bake longer. Store in airtight container for up to 3 days. Bananas must be very ripe for natural sweetness.
